A: This can be made in a deep fryer. If frying fish, pancake batter works well.
Cajun Fried Chicken
4-5 boneless chicken breasts, boneless pork chops, or any chicken with bone in
1 cup of self-rising flour, unsifted
1 tsp garlic salt
1 tsp cayenne pepper
1tbs Dijon mustard
1/3 cup Tabasco
¼ cup water
1 – 1 ½ cups oil, for frying
Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!). Place chicken in marinade, turning to coat well. Marinate for no more than 1 hour, turning frequently.
Combine self-rising flour and garlic salt in a plastic bag or container. Add chicken to coat, one at a time is best. I use tongs so my hands don’t get messy.
Heat vegetable oil in large skillet on medium high heat.
Fry chicken pieces, turning once, for about 15-20 minutes total. Remove from pan immediately and keep warm. If you use regular pieces of chicken, with bone in, cook for at least 30-45 minutes, or until done.
Garlic flavored pasta or garlic mashed potatoes and green beans or broccoli.

2 bananas, peeled and sliced
1 c. flour
1 c. milk
1 1/2 tsp sugar
1 egg beaten
1 tsp. baking powder
2 tbsp vegetable oil
In a bowl, mix all the ingedients. Mix well until you get a thick mixture. Slide all your chopped banana pieces into the mixture. Deep fry. A little bit of mixture will spread around the banana piece and that’s good.
Turn each dumpling after 1-2 minutes, so both sides are done well. As soon as the dumplings are golden brown, remove them from oil, and drain on paper towels. I might sprinkle them with powder sugar.

6 oz corn flakes
1/2 gallon vanilla icecream (i might experiment with different flavors)
12 oz cool whip (optional)
maraschino cherries (optional)
Mix caramel with cornflakes until sticky. Scoop out icecream and apply cornflake coating to cover icecream. Store any leftover coating in refrigerator. Immerse icecream ball in hot oil for 15-20 SECONDS. Remove from oil and place in a dish; topped with cool whip and a cherry.

These are similar to German Pancake recipe but you can form them into balls and deep fry them. You can use either Onions, Chives, Shallots.. even add some Garlic for a kick.
Potatoe and Chive crunchies
4 small (approx. 375g) peeled and grated
1 egg (59g)
1 tablespoon plain flour
1 tablespoon finely chopped chives
Salt and pepper to taste
Place grated potato, egg, flour, chives, salt and pepper into bowl.
Mix well to combine and shape into small cakes.
Heat Oil and drop batter in. Cook until golden brown (approx. 2 minutes each side).
Note: Potato crunch need to be prepared and eaten on the same day.
Deep Fried Potato Nuggets
2 medium white potatoes, peeled, cut into 8 pieces
4 slices bacon, cut up
1/4 cup finely chopped onions
1 cup thick white sauce mix
2/3 cup grated cheddar cheese
Oil for frying
2 tablespoons milk
1/2 cup all purpose flour
1 1/2 cups fine dry bread crumbs
In medium saucepan cover potatoes with water. Heat to boiling. Reduce heat; cover and simmer for about 30 minutes, or until tender.
In small frying pan fry bacon until crisp. Remove with slotted spoon, leaving bacon drippings in pan. Drain bacon on paper towels. Crumble. In bacon drippings, cook and stir onion over medium heat until tender. Drain and discard drippings.
Prepare Thick White Sauce. In large mixing bowl combine potatoes, onion, crumbled bacon and White Sauce. Blend at low speed of electric mixer until smooth. Stir in cheese.
In deep fryer heat 2 to 3 inches Butter Flavor Crisco to 375°F.
In small bowl beat eggs and milk together. Place flour in second small bowl. Drop potato mixture by rounded teaspoonfuls into flour. Shape into balls. Dip each ball in egg mixture. Roll in bread crumbs to coat.
Fry a few at a time in hot oil for 1 to 2 minutes, or until golden brown, turning once. Drain on paper towels. Serve immediately or keep warm in 175°F oven.
Tip: To make ahead, prepare and fry as directed. Cool. Cover and refrigerate. Reheat in single layer on baking sheet in 425°F oven for 8 to 10 minutes, or until hot.
Deep-Fried Sweet Potato Balls
3/4 pound sweet potatoes– cooked, peeled and mashed
4 teaspoons cornstarch, divided
1 pinch salt
1 tablespoon water
1 cup shredded coconut
1/2 cup brown sugar
3/4 cup sesame seeds
1 1/2 quarts oil for deep frying
In a mixing bowl, knead together potatoes, 2 teaspoons cornstarch, salt and water to form a stiff dough. In a separate bowl, combine coconut and brown sugar. Form potato dough into small balls; make a well in the center and fill with coconut mixture; close up hole and reshape balls. Roll in sesame seeds, then in remaining cornstarch.
Heat oil in deep-fryer or deep, heavy-bottomed pan to 375 degrees F (190 degrees C).
Fry balls in oil until golden. Drain on paper towels. Serve.
Deep fried Potatoe Balls
1 lb (500 g) potatoes
1/4 tsp five-spice powder
1/2 tsp scallions, chopped
2 cups (500 ml) vegetable oil for deep-frying
1/4 tsp MSG
1 tbsp (100 g) flour
5 tsp salt, or to taste
1/2 tsp ginger, chopped
1/4 tsp spiced pepper-salt
Wash and boil the potatoes, then peel and mash them. Mix well with the flour, five-spice power, salt, MSG, scallions and ginger. Form into small balls.
Heat the oil in wok to moderately hot, 230oF(110oC). Add the potatoes balls a few at a time and deep-frying until brown. Remove, drain and sprinkle with spiced pepper-salt.

A: Twinkies you don’t have to freeze, but Snickers must be frozen or the chocolate will run everywhere. They gotta be battered.
I like the classic chicken tenders, they’re always good.
My personal favorite, is deep-fried cheesecake. Its so fattening, but so good. Take a cheese cake and make them into two-bite size pieces. Take a wonton wrapper and tightly wrap them in it, throw it ina deep-fryer until golden. About 2 minutes.

2 litre good quality vanilla ice cream
1 cup flour
3/4 cup water

overnight marinade 1/2 lb chunks of either butt or shoulder ,
2-cans orange soda
1-cup cider vinager
2-tbls oregano,dry mint,crushed black pepper ,onion & garlic powder.
before you put in hot oil ( lard is preffered for taste ) drain on a rack and pat dry to prevent splatter keep pieces submerged to ensure a good even deep brown color on the crust !
remove drain on butcher paper ( be sure to salt after you remove ) heat some tortillas add salsa and enjoy !!!

1 1/4 pounds sea bass fillets, skin on
Coarse salt and cracked black pepper
1/2 cup all-purpose flour, to coat fish
2 teaspoons olive oil
Unwrap fish but leave it on the butcher paper. Season with salt and pepper on flesh side only. Sprinkle generously with flour, and then shake off the excess.
In a 12-inch non-stick skillet, heat 2 teaspoons of olive oil over medium high heat until hot but not smoking. Place the fish in the pan skin side down. Cook until golden, about 3 to 4 minutes. Turn the fish over and cook until the flesh is just cooked through and is no longer translucent, about 3 more minutes, depending on the thickness of your fish. Serves 4

A: Puff pastry can be deep fried. Use a low temp or it will burn. To do crab puffs that way:
Mix 1 package of cream cheese with 2 cups of crab. Wrap them into raviolli shaped pockets, pinch the sides, and fry them on each side until light brown on each side. MMMM!
Here is my beer batter for fish and onion rings:
1/2 bottle of Sam Adams Boston Lager or other beer
1/4 cup milk (or 1/2 cup of butter milk if you have it)
1/2 teaspoon garlic powder
1/2 teaspoon of salt
Enough flour to give it the consistency of pancake batter.
We use this for sturgeon, clams, salmon, halibut, cod, or whatever. It is also mouthwatering for zucchini or mozzerella sticks.
Be sure to dip in the batter twice for good luck and drop carefully so as not to burn yourself. (I wear latex gloves for cleanliness and protection)

I have some Italian style bread crumbs and a BUNCH of chicken breasts, I want to deep fry them with a breading, but I don’t know any recipes and the ones I looked at don’t really seem to go well with BBQ sauce (big time BBQ people, just getting too cold). A: PIROSHKI RECIPE:
3 loaves frozen bread dough, thawed
3 medium onions, chopped
1 medium head of cabbage, chopped
1 1/2 pound ground beef
Salt & pepper to taste
Brown beef and onion in heavy skillet in a small amount of oil. Add cabbage, salt and pepper (don’t drain). Steam until cabbage is tender and lightly brown, let cool. Roll dough 1/4″ thick and cut in 2 1/2″ squares.
Place 2 heaping tablespoons of mixture on top of square in the center. Place another square on top, pinch the side together. Brush on a little butter. Put into greased pan. Let rise 15 to 20 minutes.
Bake at 350 degrees F for 25 to 30 minutes, until brown.
