Okay this is maybe not the easiest recipe, but it is delicious!

There are many “beer can chicken” recipes out there to choose from ( Instead of using a chicken, get 3/4 cornins game hens, and use the tiny tomato juice cans as the holders.

You will not be disappointed making this!

Q: Last days of summer grilling recipes?
Does any one know some great grilling recipes? There is only a couple weeks left of summer and I don’t want to grill the same stuff.

Chicken, Beef or Pork Easy Marinade
1/4 cup Soy Sauce
1/4 cup Teriyaki Sauce
4 Cloves Garlic, finely diced
1/4 tsp. Sesame Oil
1 tbsp. Dried Basil
1-2 tbsp. Cajun Seasoning, +/- to taste
1/4 cup Honey
Mix all ingredients together and add to meat 3-4 hours before grilling. Use a Ziploc bag to marinate, for easy cleanup. Grill over Medium-High heat until cooked through. My kids and I make this together and it teaches them how to use measuring cups and spoons. It sound messy, but then again what kids aren’t.
Also you can make potatoes on the grill.
Wash and dry potatoes. Leave skins on. Cut into eighths. Make a large foil packet or use the ones Reynolds make. Spray inside of packet with non-stick spray. Use enough potatoes for your family. Add sliced onion, diced green peppers, garlic: coursely diced, and drizzle top with olive oil. Salt and pepper to taste. Layer all ingredients. Close packet tightly. Cook over hot coals for 15 minutes then move to top rack and continue to cook for 30 more minute on med-low heat. My kids each get an ingredient to layer and it teaches them how to arrange things in order.

A: Take about 6 potato’s and cut into eighths. Boil for about 10 minutes. Lay out some foil…enough to put potato’s in and fold up. Place potato’s in the foil and add 1 stick of butter, 1/2 of a small onion, garlic salt to taste. Lowery’s seasoned pepper… and Seasoned salt. Fold together and place on grill for about 20- 30 minutes.

A: Squid Stuffed with Pork

6 Dried Chinese mushrooms
10 Dried lily flowers
250g Minced pork
1/2 cup Cellophane noodles
1 clove Garlic, crushed
3 Spring onions, chopped
1/2 teaspoon Salt
1 tablespoon Fish sauce
1/4 teaspoon Black pepper
500g Fresh squid

Peanut oil for frying
Method :
Soak mushrooms and lily flowers in hot water for 30 minutes.

Discard mushroom stems and any tough portions of the flowers and chop the rest finely.

Add to the pork.
Soak cellophane noodles in hot water for 20 minutes, chop and add half cup to pork.

Season pork mixture with crushed garlic, spring onions, salt, pepper and fish sauce.

Mix well with the hands.

Clean squid thoroughly, discarding head and ‘ beak’ and everything inside the body.

Reserve tentacles.

Wash inside of squid under cold tap, rub off spotted skin.

Chop tentacles finely and mix with minced pork.

Stuff pork mixture into squid, packing firmly.

Sew the opening shut with a coarse needle and thread.

Heat 3-4 tablespoons peanut oil in a wok or frying pan and saute squid on medium heat for 5 minutes.

Prick squid with a fine skewer and continue to cook on medium heat for further 10 minutes, or longer if squid is large and pork mixture needs extra time for cooking through.

Cut in thin slices and arrange on a bed of shredded lettuce.

Q: Healthy outdoor grilling recipes?
Hi. I love to grill outside, but trying to drop a few lbs. for bikini season, lol!
I’m looking for tasty, easy recipes besides the same old chicken breast. I particularly like shish kebabs and seafood.

A: I love to grill salmon filets all the time winter or summer…I make it very simple, I brush it w/extra virgin olive oil, grind a little fresh black pepper on it, a little kosher or sea salt, charcoal grill it w/a little oak or maple added to the fire, and grill it medium to medium well,(otherwise it’ll be too dry). If you like squeeze some lemon on it, along w/a fresh spinach salad or baby greens, and some good Oregon Pinot Gris, it makes a good meal. I also love to get fresh scallops, the big ones, and shrimp w/bell pepper, mushrooms, maybe a little yellow and zuchinni squash /cherry toms, and kebab over coal and wood again brushed w/oil…I don’t like to marinade foods so much, I think it covers up the flavor of the food, instead of enhancing it like light seasoning does, along w/the flavor of the wood you’re cooking on…Oh-don’t forget to make yourself a big drink or have good beer handy, it always helps to have a buzz while grilling!!!

Even though it’s winter, and yes a nice 25 degrees outside, what’s your favorite grilling recipes……I do plan on making my boyfriend stand outside and grill this Fri. night…….Heehee.

A: I read one in a book called Barbecue Bible that has made a lot of people really satisfied. It is so simple, too – marinate something (usually beef for me) in olive oil, black pepper, and lime juice. It did not sound that appetizing but it is really, really tasty. Yum.

I need some fresh ideas. My regular sides when grilling are asparagus, zuchini, eggplant, potatoes and sweet potatoes.

string them on a squewer and grill.. mmmm

also thread some bell pepper squares, pineapple wedges, onion pieces and cherry tomatoes.. grill.. serve with grilled meats.. mmm

Q: How do you adapt grilling recipes for the broiler?
Like kebabs, seafood, etc. I love to grill, but we’ve had some icky weather lately. Any tricks for making these things inside?

A: If you have a gas stove you can use your broiler just like as upside down gas grill. The good thing is you never have flare ups like you can get on a grill. Those flare ups also cause smoke which will flavor your food so you do miss a little flavor, but you can make just about anything in the broiler that you can make out side. Just remember that in a broiler you dont have as much control over temperature so things can burn faster especially if it is marinated in something sweet.

Q: Nice and simple grilling pan recipes please?
My parents are away for the weekend, and I’m curious about grilling food ‘cus my mom jus bought a new stovetop grilling pan. And there’s a bottle of honey bbq sauce in the fridge. What can i do with these? Maybe chicken? or veggies? Any veggie recipes people? Er, how about a nice potato recipe too? Something simple yet delicious and nutritious would be good. Thanks a lot.

A: veggies:
1 small eggplant, cut into 3/4 inch thick slices
2 small red bell peppers, seeded and cut into wide strips
3 zucchinis, sliced
6 fresh mushrooms, stems removed
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup coarsely chopped fresh basil
2 cloves garlic, peeled and minced
Place eggplant, red bell peppers, zucchinis and fresh mushrooms in a medium bowl.
In a medium bowl, whisk together olive oil, lemon juice, basil and garlic. Pour the mixture over the vegetables, cover and marinate in the refrigerator at least 1 hour.
Preheat an outdoor grill for high heat.
Place vegetables directly on the grill or on skewers. Cook on the prepared grill 2 to 3 minutes per side, brushing frequently with the marinade, or to desired doneness.

chicken and potato:
1/2 cup vegetable oil
1/4 cup cider vinegar
1 tablespoon garlic powder
1 teaspoon ground black pepper
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried thyme

4 skinless, boneless chicken breast halves
4 large potatoes, peeled and cut into 1/4-inch slices
2 large onions, cut into 1/4 inch thick slices
2 large green bell pepper, cut into 1/4 inch strips
2 cups sliced button mushrooms
Preheat an outdoor grill for medium-high heat.
Stir together the vegetable oil, cider vinegar, garlic powder, black pepper, salt, basil, and thyme in a bowl; set aside.
Lay out 4 12×12 inch squares of aluminum foil. Place 1 chicken breast in the center of each square, top with potatoes, onions, bell peppers, and mushrooms. Ladle 1/4 of the sauce on each and fold the foil around the ingredients to form four sealed packets.
Grill the packets on the preheated grill for 30 to 40 minutes, until the internal temperature of the chicken breasts reaches 170 degrees F (75 degrees C).

A: Wow..there is so much you can do with a grill. I usually go to and find my recipes there. The easiest thing to start with would be burgers or maybe just even chicken with BBQ Sauce on it. I’ve even done pizza before which was amazing!! Try allrecipes though, you’ll find some great marinades and ideas with reviews from other cooks. good luck

Q: What are some easy grilling recipes?
I know how to grill hamburgers and hot dogs but the other stuff is questionable.. What’s a good marinate for chicken and how long do you cook the chicken. Sometimes I use chicken patties and sometimes I buy with the bone in. How long does it take to grill a steak? or a thick pork chop?

Does anyone have a good pasta salad?? I usually boil pasta, add a few things and then dump a bottle of dressing on it. What kind of dressing do you really like??

A: Wow! You packed a lot of question into one! LOL. You’ll probably get a lot of answers on the grilling stuff, so, I’ll just say a couple of things on that. For chicken, I prefer to precook it in the oven & then just grill for flavor, a couple of minutes per side. Of, I use my rotissierie and cook a whole chicken about 1.5 hours. For steaks, it depends upon how done you want it (always start with a GOOD cut of steak!!! Like rib eye or fillet, etc)…then let it sit out for 30 mins before grilling, then season lightly, & grill for about 7 mins per side (for Medium). Pork chop probably about the same, maybe just a min more.

For a really good pasta salad…try this one!

Garden Pasta Salad

½ cup salami, pepperoni, OR mortadella, cut into small pieces
1 medium tomato, peeled & chopped
¼ cup chopped cucumber
¼ cup chopped green pepper
1 slice medium onion, finely chopped
1 tablespoon snipped parsley
Fresh Herb Dressing (recipe follows)
8 ounces wide noodles
¼ cup crumbled feta cheese (1 ounce)

In mixing bowl, combine meat, tomato, cucumber , green pepper, onion and parsley Toss with Fresh Herb Dressing. Cover & chill thoroughly.

Cook pasta (per package instructions), drain & rinse with cold water & drain again. Continue rinsing & draining till pasta is well chilled.

Turn cooked pasta into a salad bowl. Spoon meat-dressing mixture atop pasta. Sprinkle with crumbled feta cheese. Toss. Makes 2 servings.

Fresh Herb Dressing:
In a screw-top jar, combine ¼ cup salad oil; 3 tablespoons dry white wine; 2 tablespoons lemon juice; 1 tablespoon sugar; 2 teaspoons fresh snipped basil or ½ teaspoon dried basil, crushed; ¼ teaspoon salt; 1/8 teaspoon pepper; and several dashes bottled hot pepper sauce. Cover & shake well.
