Q: I am compiling a Barbecue Cookbook. Looking for BBQ recipes that are suitable for the “Average Person”.
I don’t want recipes that involve exceptionally expensive or difficult-to-find ingredients. I am looking for unique recipes that have been passed-down through familes, etc.

The idea is that a regular person can make one trip to the local supermarket, and pick up everything he/she needs to make a great grilled meal. I am trying to appeal to everybody, as much as possible.

Easy-to-prepare side dishes (and possibly desserts) will also be included; again, the idea is simplicity and economy.

All of these recipes, as well as advice on cooking technique, will be available on my Web Log, Barbecue For Real. In exchange, I get to try out new recipes.

A: I have a great one~it has been in my family for 50 years~ created by Joe Martin:

Uncle Joe’s BBQ Sauce:

1 medium onion, grated or processed in food processor
3 garlic cloves, minced
2 Tbsp olive oil
2 8-oz cans of tomato sauce
1/2 c. vinegar
1/4 c. worcestershire sauce
1 Tbsp Louisiana hot sauce
1 1/2 Tbsp powdered mustard
1/2 tsp chili powder
1/2 tsp cayenne pepper
1/2 tsp salt
1/2 cup brown sugar, packed
1 cup Heinz catsup
1/2 lemon

Saute onion and garlic in olive oil. Add other ingredients, squeeze in the lemon juice (Uncle Joe threw in the lemon rind~I don’t). Simmer about 20 minutes, stirred frequently. Makes about a quart of wonderful sauce~

A: Latin Grilled Halibut with Green Sauce:

6 small halibut, about 3/4 inch thick (about 2 and 1/2 pounds)
1 tablespoon olive or vegetable oil
1 teaspoon seasoned salt
1 jar (16 oz) green salsa (salsa verde) (2 cups)
1 ripe avocado, pitted, peeled and chopped
2 tablespoons chopped ripe olives
Sour cream
Fresh cilantro leaves

Brush fish lightly with oil; sprinkle with seasoned salt.
Grill fish uncovered 4 to 5 inches from medium-high heat about 10 minutes, turning once, until fish flakes easily with fork. Mix salsa, avocado and olives. Serve over fish. Garnish with sour cream and cilantro. Enjoy!!

Q: Does anybody have good recipes for barbecuing?
I’m looking for different but good recipes I can use to bbq since we always eat the same things and I’m getting sick of it. Any ideas?

A: Use Italian salad dressing as a marinade for chicken.
Make skewers of meat and vegetables for shish- kabobs.
Make pockets of vegetables wrapped in tinfoil and grill with seasoning and butter.

Q: bbq recipes for 50 people?
We are getting married on the 4th of july in no. illinois and want to have bbq. Anyone have awesome recipes for some barbecued chicken legs/ country style pork ribs? And tips on how to prep and cook for that many?

A: Marinate both the chicken legs and pork ribs in this:

1 cup liquid smoke
1/4 cup worcestershire sauce
3 tbsp yellow mustard
4 cloves minced garlic
1 tsp black pepper
1/4 cup brown sugar
1 tsp cayenne pepper

Make two batches of this marinade and marinate the chicken and ribs the night before.

The morning of the big day, take all meat out of the marinade and wrap it in foil. Cook the meat on 300 for 4 hours.

Then, take the meat to the place you are having the get together and grill it basting with your favorite BBQ sauce.

A: Honey Barbequed Chicken Wings

2 pound(s) Chicken Wings
2 cup(s) Sweet Baby Rays Barbeque Sauce or Your Favorite
1/4 cup(s) Water
1/4 cup(s) Honey
1/4 cup(s) Brown Sugar
1 Medium Onion, Diced
2 tablespoon(s) Red Wine Vinegar
1/4 cup(s) Chopped Parsley
1/2 teaspoon(s) Black Pepper
1/2 teaspoon(s) Minced Garlic

Cut the tips from the chicken wings, and discard. Disjoint each wing using kitchen shears or deboning knife. Place and spread wings evenly on 1 inch deep baking dish or broiler pan. Bake wings at 350 degrees 40-45 minutes, or until meat begins to losen from bone. Remove and discard grease from pan.

Meanwhile, mix all the other ingedients in a sauce pan. Bring to a rolling boil. Simmer about 20 minutes until thick.

Line 1 inch deep baking dish or broiler pan with aluminum foil. Spread wings evenly on pan. Pour sauce evenly over wings. Bake until nice and gooey, 10-15 minutes. Serve hot or cold.

A: * 2 cups ketchup
* 1 bulb garlic, peeled and crushed
* 1 cup water
* 2 tablespoons hot sauce
* 1/4 cup honey
* 2 tablespoons molasses
* 2 tablespoons brown sugar
* 1 teaspoon Worcestershire sauce
* 1 teaspoon soy sauce
* 1 teaspoon salt
* 2 tablespoons Cajun seasoning
* 1 pinch paprika
* 1 pinch crushed red pepper
* 1 pinch ground white pepper
* 1 pinch ground black pepper
* 2 tablespoons cornstarch
* 1 tablespoon water
* 1/2 cup butter

DIRECTIONS

1. In a large saucepan over medium low heat, mix together ketchup, garlic, 1 cup of water, hot sauce, honey, molasses, brown sugar, Worcestershire sauce, soy sauce, salt, Cajun seasoning, paprika, red pepper, white pepper and black pepper. Allow the mixture to simmer approximately 30 minutes.
2. In a small bowl, dissolve cornstarch in 1 tablespoon of water. Adjust amount of water as needed to fully dissolve cornstarch. Stir into the sauce mixture. Continue simmering approximately 15 minutes.
3. Stir butter into the sauce mixture. Continue simmering mixture approximately 15 more minutes, or until butter is melted and the sauce has begun to thicken. Serve over meats prepared as desired.

My hubby will only eat one kind of fish ( shrimp )

A: Here’s a rich BBQ SHRIMP recipe

“Lg. shrimp, deveined & shelled
Equal amt. of partially cooked bacon strips
Mozzarella cheese, sliced
Toothpicks

Cut shrimp down back, stuff with tiny slice of Mozzarella. Wrap bacon around stuffed shrimp. Secure with toothpicks. Place on skewers (wooden bamboo skewers need to be soaked in water for at least 1 hour before putting shrimp on). Brush on favorite BBQ sauce and barbecue for approximately 3 to 5 minutes on each side until done, adding barbecue sauce when needed. Serve over rice or alone.”

Q: besides just plain old barbecue chicken what is a good recipe that smothers the food with bbq sauce?
what can i cook or barbecue that would just be savored with bbq sauce flavor? anything is a good thing?
Ahhh RIBS of course how coudl i forget anything else?

A: I make a glazed meatball that is a favorite around my family. I make the usual meatloaf recipe with ground beef, egg, cracker crumbs, crushed tomatoes, onion, salt and pepper. I make the meatballs HUGE (softball sized) and bake them till done. I drain the pan and cover the meatballs with this glaze: 1 cup catsup and 1/2 cup bbq sauce and 3/4 cup brown sugar. Add garlic powder and black pepper to taste..
Return to oven and bake 15-20 minutes till glaze looks dry. Serve with creamed potatoes and a garden salad.

Q: Head Country Barbecue Sauce Recipe?
My husband went to OK for military training and fell in love with Head Country BBQ Sauce. I’ve been searching the net for recipes to make the sauce. I’m also looking for other BBQ recipes and sauces for brisket, pulled pork sandwiches, and coleslaw that isn’t all watered down but nice and crisp. I love the carolnia style but I’m trying to find a great dry rub and carolina style sacue recipe.

Q: BBQ/Barbecued Fish?
For something different, I’d like to barbecue fish. Have been told that the best way is to purchase fresh fish (cleaned, de-boned, etc.), wrap it in foil and put on grill on low to medium. What seasoning are best, and do I add butter inside the foil? How long to cook and is low-med. correct? What fish is easiest? Unfortunately 2 of my family members will not eat salmon or tuna, but like almost any other type of fish…I’m thinking trout (?) (I live near a fish outlet where I can purchase fresh fish). Any suggestions and/or simple recipes would be appreciated! Thanks.
p.s. – I BBQ’d large pre-cooked shrimp in foil and was ok, not great – perhaps because it was pre-cooked?

We are having a BBQ tonight and I need some great recipes to impress our guests. Any ideas?

A: these are a few BBQ recipes i usually make:

BBQ steaks:

Heat 1 tbsp oil in a sauce pan,add 2 garlic cloves minced fry for 1 minute, stir in 1 3/4 cups ketchup, 2tbsp brown sugar 2tbsp mustard sauce, 2 tbsp woschestershire sauce, 2 tbsp vinegar, 1tbsp chilli sauce and 1tbsp fresh lemon juice……simmer while stirring, lower the flame….let it simmer for about 15 mintues……..then in a plastic bag put the lean steaks and put his marinate(when not too hot)…..and refrigerate as long as you could…….then BBQ your steaks

Tandoori chicken
1.1/2 teaspoon curry powder
2.1/2 teaspoon red pepper flakes
3.1/2 teaspoon salt
4.1/4 teaspoon ground ginger
5.1/4 teaspoon paprika
6.1/4 teaspoon ground cinnamon
7.1/4 teaspoon ground turmeric
8.2 tablespoons water
9.4 skinless, boneless chicken breast halves
1.Preheat grill for high heat.
2.In a medium bowl, mix curry powder, red pepper flakes, salt, ginger, paprika, cinnamon, and turmeric with water to form a smooth paste. Rub paste into chicken breasts, and place them on a plate. Cover, and allow to marinate for 20 minutes.
3.Brush grate with oil. Place chicken on the grill, and cook 6 to 8 minutes on each side, until juices run clear when pierced with a fork

Honey mustard Grilled chicken:
1.1/3 cup Dijon mustard
2.1/4 cup honey
3.2 tablespoons mayonnaise
4.1 teaspoon steak sauce
5.skinless, boneless chicken breasts halves
Preheat the grill for medium heat.
In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.
Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!
For 4 people

bbq chicken with veggies and tomatoe sauce:
chicken cubes of the bone…marinate with(if its half a chicken)……mustard powder 3 tsp, salt according to taste, ajinomoto 3 tsp, vinegar 1 tbsp, soya sauce 2 tbsp….marinate for 30 minutes or more(it will taste better……..when your charcoals are hot…..in each wooden stick put a chicken cube, put a piece of tomatoe(square shape) , capsicum(square shape),onion(square shape) and put 3 or 4 chicken cues in one stick……and bbq it…………in suace pan put some oil put 1 cut green chilli cut from between, add 6 to 7 tbsp of tomatoe paste, black pepper, salt and chilli powder according to your taste…..and cook for about 7 to 10 mins you would need to add a little bit of water……….when the chicken sticks are done pour this sauce over the sticks and its ready to eat!….and is very yummy!

You make a salad too!…its good with BBQ…….if you want to make a mayonnaise salad….make this one……..put 3 tbsp mayonnaise add about 2tbsp milk, a tsp ketchup, salt according to taste, caster sugar ½ tsp…mix well…….add boiled peas, corn, beans, macaroni (1/2 or less than ½ pack) and peel, cut in small cubes of potato and boil and add this too….your salad is ready!…..if you want it to be crunchy….instead those boiled stuff add sliced cabbage, carrots, chopped apples and some ice berg lettuce……..if you don’t want mayonnaise dressing then in 2tbp vinegar, add 4 cloves of crushed garlic, 1 tsp caster sugar salt and pepper according to taste and some olive oil or salad oil(I use cooking oil too sometimes) and 1 ½ tsp oregano leaves(optional).

You can make some garlic bread as well: take one small stick of butter(room temperature)….take it out in a bowl add salt according to taste, dried
oregano leaves 1 ½ tsp, dried parsley 2 pinches, some garlic powder 2 tsp would be enough….a pinch of dried red chilies would be good too…..cut the french bread into slices…cover you baking tray with foil……put the butter mixture on each slice….place on tray cover top with foil make some holes with a fork…..and place the tray on your hot BBQ stand…..check when sides aare golden…this will take about 10 or 15 mins on a BBQ stand….do check…and serve!

Make a drink: take one big bottle of sprite of 7up….add half pack of apple juice or grape juice(I like apple)…..chop one 1or 2 apples into tiny bits(very tiny)…you can add a few very thin slices of apple, add this to the mixture chill and serve!

You can make butter the buns a bit only and toast them over the BBQ stand….and BBQ burgers patties also…put mayonnaise on the buns some ice berg lettuce….burger patties on it and ready to eat…….you can make you own BBQ patties too in mince add woschestershire sauce, salt,ajinomoto and pepper according to taste…add more spices its better…enjoy your BBQ!

ok im looking for new bbq/sauce recipes i hear alot about southerrn bbq but never had it so any 1 with a good recp. plz share heres how i do mine my pork ribs i take’em rite out the pack season with salt,pepper,soul seasoning,& what evers in the cabinet & on the grill they go my sauce i mix a bunce of sauces together with a lemon & a beer ketchup & heat slow all day ti’ll my bbq is done people say all my bbq/sauce is really good but i be whiching that grilling show on that channel versus & i cant even start to imagine what they bbq be tasting like so i really wanna get some good recipes for this summer & i use a charcoal grill thx….

Lone Star Barbecue Spareribs
You can vary the sauce for the spareribs according to your taste, of course, but you and yours will love it “by the book.” The recipe easily doubles if you are feeding more than 4 or 5 people and have a grill or pit to accommodate that much meat. Remember, you are not grilling directly over the coals, so you won’t be able to use the entire grill surface.
4 pounds beef or pork spareribs
olive oil
salt and freshly ground black pepper
4 tablespoons butter
1 medium onion, chopped
5 garlic cloves, minced or put through a garlic press
2 large, ripe tomatoes, chopped
1 6-ounce can tomato paste
1/4 teaspoon Tabasco sauce
2 teaspoons Worcestershire sauce
1/2 cup brown sugar
1 heaping tablespoon Dijon mustard
salt to taste
cayenne pepper to taste
1/2 cup red wine (not the cooking variety)
juice of 1 lemon
You’ll be grilling the ribs for about an hour and a half, saucing them during the last 15 minutes. This sauce contains brown sugar and other ingredients that will flame up, so indirect grilling is called for. Start your charcoal or wood or fire up your gas grill. Rub the slab of ribs all over with the olive oil, sprinkle liberally with salt and pepper, and rub it in. Cover and set aside.
Start your sauce: In a large skillet over medium heat, melt the butter. When it begins to bubble, add the onion and garlic and sauté until translucent, about 3 minutes. Add all remaining ingredients, stir and turn heat to medium-low. Cook for 20 to 30 minutes until mixture is somewhat reduced and thickened. Taste the sauce and adjust the seasonings, if you think it necessary.

When your grill is ready, put the ribs, bone side down, in the center of the grill. Make sure that the drippings won’t drip directly onto the heat source. Cover the grill and open the vents enough to make sure there’s air flow. Grill the ribs for 1 hour, turning at 30 minutes and one hour.

If you need to build up your fire again, add more coals at this point. Be sure to keep the lid closed at all times unless you are tending the ribs or the coals.

About 15 minutes before they are due to be ready, give the ribs a good basting on both sides with the sauce. Bring the sauce back to a gentle boil for a few minutes. When the ribs are done to your liking, take them off the grill and serve immediately with the sauce on the side.

A: 9 cups Worcestershire sauce

4 cups apple cider vinegar

1 1/2 cups tomato juice

1/2 cup hot pepper sauce

2 quarts ketchup

1 /2 cup minced garlic

2 cups brown sugar

2 cups white sugar

1 /2 cup paprika

1 /2 cup black pepper

6 tablespoons onion powder

1 /2 cup salt

Liquid smoke, to taste

1 cup Jack Daniel’s Whiskey

In a pot, mix and simmer all the ingredients except the Jack Daniel’s Whiskey for 1 hour. Add the whiskey after the mixture has cooked and cooled.

Yield: 1 1 /2 gallons

Heat Scale: Mild

Q: Seeking recipe for spicy japanese bbq sauce–with miso?
There’s a great restaurant in the Sacramento, CA area called Mikuni’s where they serve tuna with a spicy red sauce. I think it may have a miso base, but it looks like a barbecue sauce. Does anyone have a recipe for it?

A: I don’t have that kind of recipe but I will get what I have, here it is..

Miso Dipping Sauce Recipe – Japanese Recipe

INGREDIENTS:

1 cup soy sauce
3/5 cup miso paste
1/2 cup sugar
1/2 onion (grated)
1/2 apple (grated)
1 1/2 tbsp sesame oil
1 tbsp grated garlic
2 tsp grinded sesame

PREPARATION:

Put miso paste in a bowl. Add sugar and mix well. Then, add other ingredients in the bowl and stir well.

Q: Brazilian bbq recipe?
I just had Brazilian barbecue last night for the first times last night and it was so delicious. Does anyone have the recipe on they make their barbecue beef? I think it’s called “churasquerias”.
